Rick Stein made Devon-based abattoir owner and butcher John Coles a Rick Stein Food Hero in recognition of the importance of his contribution to the production of great meat. Professionals at the abattoir will deal with animals with respect, efficiently and humanely. Minimising stress prior to slaughter is hugely important, not just for obvious welfare reasons, but also because the quality of meat is adversely effected by the hormones released when an animal is stressed.
